
NgON starts with a word. Ngon is Vietnamese for delicious — the thing you say mid-bite, without thinking, when something is simply right.
We are a small team in Nottingham making bánh mì the way we grew up eating it. Fresh bread, fresh herbs, everything made by hand, every day.
For us, bánh mì is not just fillings in bread. The first bite needs a proper crack — a thin, golden crust outside and a soft, light, airy centre inside. Pickles sharp but balanced. Fillings generous without being heavy. Every sauce with a reason to be there.
So we test, change one small thing, taste everything again — and sometimes go back to the beginning because one detail still does not feel right. It would be easier to rush. That is not what NgON is becoming.
From NG to NgON: we are bringing a young energy of Vietnam to Nottingham — honest to where we are from, and free to grow into something new here.
